How To Prepare Pumpkin Soup For Thanksgiving

Soups are great appetizers which can be served just few minute before your start serving your main course or snacks. Pumpkin soup is the flavor of a Thanksgiving party because it is very tasty and loved by all. In this article I am going to give you a recipe of Pumpkin soup which you can easily prepare by yourself. Required Ingredients:
• Pumpkin - 1.4 kg of ripe pumpkin
• Butter – Plain(unsalted )100 g of butter
• Chicken Stock -1.3 liters (hot)
• Cheese - 100 g fresh grated Parmesan cheese
• Cream - 3–4 tbsp of double cream
• Sea salt and freshly milled black pepper
• Extra-virgin olive oil
• Shavings of fresh Parmesan cheese
 
Preparation:
1. Peel of the pumpkin, remove the seeds and cut it into small pieces. Now slice the pumpkin thinly.
2. Take a heavy, large saucepan and heat the butter on a medium-high-heat until the butter turns brown forming foam.
3. Now add pumpkin to the butter, shower it with salt. Turn the heat to low and keep stirring the preparation. Cover and let the preparation cook for 10-15 minutes. Keep on shaking the pan to avoid any burnt food.
4. Increase the heat to high and let the mixture boil. After a boil add the Parmesan cheese. Now turn the heat to low again and keep on stirring the mixture. Leave the mixture uncovered and cook for 15 minutes.
5. Now put the above prepared mixture (soup) in a blender and blend well. Put the soup through the sieve.
6. Beat the soup in cream and reheat the soup. Add seasoning to give flavor and taste to the soup.
7. While serving place the soup in warmed bowls, sprinkle some olive oil, and Parmesan shavings. Serve hot to the guests.
